Like many kids, I wasn’t too keen on eating Brussels sprouts. The bitter taste did little to popularize the vegetable. In an effort to boost its popularity, food scientists targeted specific compounds known as glucosinolates, which are responsible for the bitterness. Through selective cross-breeding of certain varieties, they successfully reduced the levels of these compounds resulting in a sweeter, more appealing version of the sprout. This well-known transformation turned the Brussels sprout into a kind of ambassador, a playful reminder of humanity’s tendency to shape and control the world we live in. And a testimony that in the past not everything was better, but sometimes just more bitter.
